The hotel boasts a fully equipped gym, Sky/Zen pool with jets, bar and Sky Bar where the uninterrupted views of sunset while the ocean forms the perfect backdrop, is the place to be at dusk. Guests can venture down to the fully stocked underground wine cellar, where they can choose their own wines from the Cellar Select Menu, a separate menu from the wines on offer on the wine list. The restaurant’s kitchen is managed by talented cooks from the local community, under the skilful eye of the manager and owners. The restaurant is open to the public and offers seasonal menus and caters for breakfast, lunch and dinner. Enjoy a slice of Sky Villa in your own home, with their ‘mussels in a white wine sauce’ pair it with the Waterford Cabernet Sauvignon or the Tokara Cabernet Sauvignon.

Sky Villa mussels recipe

Mussels in a white wine sauce to be enjoyed with a full body Cabernet Sauvignon

(Serves 6)

Ingredients:

750ml white wine

300g white Onion (chopped)

30g butter

1lt cooking cream

300g garlic (chopped)

2kg fresh mussels (or frozen if fresh not available)

Chives (chopped)

Salt en pepper to taste

Fresh sourdough bread (sliced)

Method:

Sauté the Onion in the butter until translucent, then add the garlic and sauté together for a further minute. Add the white wine and and reduce for 3 minutes. Add the cream and cook until the cream thickens. Add salt and pepper (to taste)

Add the fresh mussels and cook until all the mussels (between 3 – 5 minutes) opens.

Serve in individual bowls, garnished with chives. Served with a slice or two of fresh sourdough bread and enjoy!
